I personally LOVE desserts! In my desire to be healthy, I am always on a quest to find healthy alternative dessert recipes!
If you have any you'd like to share, write in and I'll post them here!
I think these would also be really good in bar-form as well.
Ingredients:
1/2 cup nuts (any nuts of your choosing - throw a variety in if you'd like!)
1 apple
1/2 cup shredded unsweetened coconut
1 tsp coconut oil
1/4 cup pitted dates or prunes (or a mixture of the two)
1 banana mashed
1/2 tsp baking soda
1/3 cup coconut flour or almond flour
1/3 cup coconut milk
Cinnamon to taste
How to:
Preheat oven to 350 degrees
Blend the nuts, apple, shredded coconut, coconut oil and dates or prunes in a food processer or blender.
In a separate bowl, mash 1 banana, mix in baking soda, coconut flour, coconut milk and cininamon with banana. Once mixed together, add the nuts/apples/dates mixture to the bowl. Mix all together.
Use a tablespoon to spoon out cookie-size dalops on your cookie sheet
Cook for 25 minutes
Note: If you don't have coconut flour, try almond flour instead, (lots of grocery stores sell it.) You can also make it at home. Grab 1/2 cup of almonds, (I buy the shredded almonds from Costco,) blend them up, and presto, you have almond flour! Coconut Milk can usually be found in the canned section of all grocery stores. Some grocery stores are starting to carry it in a carton with cow's milk as well!
5-6 sprigs of kale
2 tbsp balsamic vinegar
2 tbsp soy sauce
1/4 C Tahini
1/2 C water
1 Shallot
How to:
Blend together the balsamic, soy sauce, tahini, and water - set aside
Peel and cut up shallot into strips, and strip kale leaf from spine by gripping the base of the spine and sliding your hand up - leaves will pull off the spine easily.
Place just under 1 tbsp of coconut oil in pan set to Med. heat. (Olive oil is another good option if you don't have coconut oil.)
Place cut shallot into pan, heat until soft and nearly transparent.
Place kale leaves into pan, place lid on top for 1 minute, then stir kale. Kale will begin to wilt and shrink. At this point, add sauce, stir to cover leaves in sauce.
You're done! Place this on a bed of rice or quinoa. Yum!
Kale Salad - Raw Food Recipe!
3-4 sprigs of kale
2 tbsp balsamic or red wine vinegar
1-2 tbsp olive oil
1/4 cup handful toasted nuts
1/4 cup currants or dried cranberries
favorite salad toppings
Optional sprinkle of pepper and sea salt to taste
How to:
Strip kale leaf from spine by gripping the base of the spine and sliding your hand up - leaves will pull off the spine easily.
Chop up kale into bite-size pieces
Toss in a large bowl and cover in vinegar and oil to coat leaves - set aside
Warm up a frying pan on med heat, place nuts in frying pan and mixing often to prevent burning. Nuts are done when they're a nice golden brown.
Add toasted nuts and currants to kale, (and any other salad toppings you like,) and you're done!
Another really easy way to add Kale to your diet is to throw it in with your smoothies! I usually put 1-2 sprigs.
